In order to perform correctly, grease removal devices must be adequately sized to allow the grease and settleable solids to separate within the device. The sizing Table(s) below is based on the number of Drainage Fixture Units (DFUs) within the kitchen or source (see UPC Chapter 7), and the type of grease removal device used.
